I think you can tell by now but I LOVE to bake! The one genre of baking that I have never delved into is candy and I feel like this is the perfect start. Gummy Bears! When I was doing research on how to make these, I learned that there are a million and 1 ways to do it but the way that appealed to me most was the Jello version. So that is what we are making today.
Preparing the Mold
One of the most important steps in this recipe is preparing the mold. This recipe makes 1 tray of gummy bears and this tray that I have has 54 gummy bears in it. I split up the recipe in this way so that you guys could easily get 1 tray of each desired gummy bear flavor.
To prepare these molds is super simple. All you need to do is spray the mold with nonstick spray and brush inside each mold with a pastry brush. Lastly, just wipe off the excess spray with a paper towel.
What is Sorbitol
This recipe uses sorbitol. Sorbitol is a sugar substitute and gives gummy bears in particular the chewy texture that gummy bears are known for. It is completely optional and can be left out but you will be left with gummy bears that are a little firmer than jello in texture.
Solution
This solution has to be done in stages. First you have to combine the cold water and corn syrup and make sure to stir this until completely dissolved. Then move on with the rest of the ingredients:the unflavored and flavored gelatin, the citric acid and the sorbitol. Stir this all together until there are no lumps whatsoever. Then leave it for 10 minutes. This allows all of the gelatin granules to absorb the water and expand. This is called “blooming” the gelatin.
After the 10 minutes just heat up your solution until dissolved and you are left with a syrupy mixture. Then carefully pour into the molds. I used an eye dropper tool that came with my mold. I will put the link to it down below. Some people also use candy funnels.
Getting Rid of that Sticky Texture
These need to set in the fridge for a minimum of 3 hours but overnight is best for the texture to develop. After that, your gummy bears will be a tiny bit wet and sticky. No worries though. That is easily fixed. Just put them in a bowl with 1 teaspoon of corn starch. I like to put them in a bowl with a lid and shake them to evenly to coat but if you prefer to just stir them to coat them in the corn starch that’s fine too. After they are coated in the corn starch, just add 1 teaspoon of vegetable oil and toss to coat and then just mop up the excess oil with a paper towel.
Now that I showed you how simple it is to make homemade gummy bears, I hope that you try these and don’t buy because they are so much fun to make and then you have delicious gummy bears that are just as good if not better than store bought. And what’s better that this is the perfect recipe to do with the kids. So while your kids are home this summer, try this out.
Homemade Gummy Bears
Fruity, chewy and delicious gummy snacks in a variety of different flavors
Ingredients
- 3 Tablespoons of Unflavored Gelatin
- 3 Tablespoons of Flavored Gelatin Powder of your choice
- 2 Tbsp of Light Corn Syrup
- 3 Tablespoons of Sorbitol
- 1/4 of a Cup of Water
- 1/4 of a Teaspoon of Citric Acid
Instructions
- Prepare the gummy bear mold by spraying it with nonstick spray and brushing the inside of each cavity with a pastry brush.
- In a small sauce pot, combine the water and corn syrup and stir until the corn syrup is dissolved.
- Add all the other ingredients and whisk until dissolved.
- Let the mixture sit for 10 minutes for the gelatin to bloom.
- Heat up the mixture over low heat for about 5-10 minutes or until dissolved.
- Using an eye dropper, candy funnel or tool of your choice, carefully pour the mixture into the molds.
- Let set for a minimum of 3 hours and up to overnight for best results.
- Unmold your gummies into a bowl.
- Optional step to get rid of sticky residue - Place the gummies in a bowl with 1 Teaspoon of cornstarch. Stir the gummies around to coat them evenly in the cornstarch. Place the gummies in a sifter to get off the excess cornstarch. Place 1 Teaspoon of Vegetable oil in a boil with the gummies and stir them to coat in the oil. Use a paper towel to soak up the excess oil from the gummies.
- Place the gummies in an airtight container in the fridge
