This is the start of a new series on my YouTube channel  and blog where I am going to be making homemade candy bars.  If you have never had a Twix candy bar before, they are a shortbread cookie base, topped with caramel and incased in chocolate.  This can be seen below.  And I am going to start with my favorite, the Twix bar.  I am taking one creative liberty with this.  I am going to be using semi sweet chocolate to make these candy bars a little less sweet.  If you want to use milk chocolate, that is 100% up to you.  

Homemade Twix Candy Bars Layor #1 Shortbread Cookies

       A shortbread dough is pretty straight forward but sometimes the texture and consistency can be tough to get right.  You want this dough to be dry and crumbly, but not so much that it falls apart and can’t be made into a dough.  If it sticks to your work surface or hands, add flour and if it is too crumbly, add water.  

       From here you can roll the dough out to a rectangle and put it in the fridge to chill for one hour.  You really want it to be nice and cold and firm before you stick these cookies in the oven.  You don’t want these to spread hardly at all and it makes putting the caramel on 10 times easier if you have a flat surface to the cookie to adhere the caramel.  To be honest, I didn’t use any guide or dimensions for mine but if you would like to I was thinking about 1/2 inch by 2 inches.  Or you can measure a real Twix.  After they are cut, they need to go back to the fridge for 20 minutes, just to make sure they are good and chilled before baking.  After chilling, bake for 25 minutes or until golden brown.  When they cool, just melt some chocolate and coat the bottoms in a thin layer of chocolate. Leave at room temperature to set.

Homemade Twix Candy Bars Layer #2 Caramel Layer

     This layer starts very simply with some store-bought caramels.  To make the caramel layer, I started by unwrapping each of the caramel and putting them in a square formation on a piece of parchment paper and microwave that for about 15 seconds to get the caramels a little bit more malleable.  Place another piece of parchment paper on top of the caramels and roll them out to one big sheet that is a quarter inch in thickness.  Refrigerate that until after your cookies are done and the bottoms of the cookies are coated in chocolate.  When that’s all done, cut the caramel into bars to match the cookies.  Spread a thin layer of chocolate on top of each cookie  and adhere the caramel on top.  Leave the cookies to set for another 20 minutes at room temperature.

Homemade Twix Candy Bars Layor #3 Incase in Chocolate

     This last step is very simple.  All you have to do is using a small offset spatula just cover the entire bar in chocolate.  Just be very careful to cover all areas of the bar. Now leave these at room temperature for about 20 more minutes until the chocolate is hardened.

Homemade Twix

Yield: 40 Bars
Prep Time: 1 hour
Cook Time: 25 minutes
Additional Time: 3 hours
Total Time: 4 hours 25 minutes

A shortbread cookie bar topped with chewy caramel and incased in chocolate.

Ingredients

Shortbread Cookies

  • 1/3 of a Cup of Granulated Sugar
  • I Stick of Unsalted Butter
  • 1 Large Egg
  • 1/4 of a Teaspoon of Salt
  • 1/4 of a Teaspoon of Baking Powder
  • 1 3/4 Cups of All Purpose Flour

Ingrediants for Other Layers

  • 60 Chewy Caramel Candies
  • 20 oz of Semi Sweet Chocolate (You can use milk chocolate if you like)

Instructions

Caramel Layer

  1. Unwrap each of the caramels and arrange them into a square formation on a sheet of parchment paper.
  2. Microwave this for 15 seconds to soften.
  3. Place a second sheet of parchment paper on top of the caramels.
  4. Roll the caramels out into one big caramel and rolled out into 1/4 inch thickness.
  5. Refridgerate until ready to use later.

Shortbread

  1. In a Large bowl, combine the butter and sugar and mix until light and fluffy. About 2 minutes.
  2. Add the egg and mix until incorperated.
  3. Sift in the dry ingredients and mix until mostly incorperated.
  4. Turn the dough out onto a lightly floured cutting board and knead until it comes together in a dough. If it is too sticky add some flour and if it is too dry add water. Press into a rectangle,wrap in plastic wrap and place in the fridge for 1 hour.
  5. Roll the dough into 1/4 of an inch thickness and cut the dough into 1/2 inch by 2 inch pieces.. Leave to set at room teperture for 20 more minutes.
  6. Bake at 325 degrees for about 25 minutes or until golden brown.

Constructing the Twix

  1. When the cookies have cooled, melt the chocolate in a microwave safe bowl and heat in 30 second intervals stirring in between until completely melted.
  2. Using a small offset spatula spread a thin layor of chocolate on the bottem of the cookies ,leave to dry, chocolate side up on a drying rack in the fridge. Let dry for 20 minutes.
  3. Take the caramel slab out of the fridge and using the cookies to guide you, cut out a slab of caramel for each cookie.
  4. Spread a thin layor of chocolate on the top side of each cookie and stick the caramel peice to each one.
  5. Leave to dry at room temperature for 20 minutes.
  6. Using an offset spatula to coax the chocolate over the edges, gently pour the raimaing chocolate over each bar, being careful to make sure every last bit is covered.
  7. Leave to dry for 20 minutes.
  8. Keep leftovers in an airtight container at room temperture.
