Hi Everyone! So one my favorite store bought confections is Little Debbie Cosmic brownies. So you know I had to figure out how to make them homemade.

If you have never seen cosmic brownies before, they are a chewy/fudge brownie with a chocolate ganache topping and sprinkled with colored, candy coated chocolate chips. They are incredible and I can’t believe it has taken me this long to make a homemade version.

So here it goes, how to make Cosmic Brownies. So let’s get started.

Perhaps one of the most distinct things about Little Debbie,Cosmic Brownies are the rainbow chocolate chips on top.

I have seen variations of these copycat cosmic brownies with other kinds of sprinkles but I really wanted this cosmic brownies recipe to be as true to the real thing as possible.

It took some digging but I did find these rainbow chips on amazon and I have linked them below if you would like to check them out for yourself.

The Recipe

For this recipe, I used my fudge brownie recipe as a jumping off point. From there I just used all brown sugar as opposed to half brown and half granular to make for a chewier texture and a little more flour.

Best Practice for How To Make Cosmic Brownies

If you can stand it, these homemade cosmic brownies should really be left in the fridge for another 24 hours. The texture really changes to match the texture of a store-bought Cosmic Brownie if they are chilled. They get denser and chewier.

Storing Left Over Cosmic Brownies

Normally, brownies can be left at room temperature in an airtight container but because of the ganache which has cream, these homemade cosmic brownies must be stored in the fridge. They will stay good for up to a week.

Cosmic Brownies

Cosmic Brownies

Yield: 8 Brownies
Prep Time: 30 minutes
Cook Time: 35 minutes
Additional Time: 20 minutes
Total Time: 1 hour 25 minutes

The "at home" recreation of "Little Debbies, Cosmic Brownies". A dark,fudgy, chewy chocolate brownie with chocolate ginache on top and sprinkled with cany coated chocolate chips.

Ingredients

Brownies

  • 1 Stick (1/2 cup) of Unsalted Butter
  • 8oz of Semi Sweet Chocolate Chips 
  • 3 Eggs 
  • 3/4 of a cup of All Purpose Flour (93.75g)
  • 1 1/2 cups of Light Brown Sugar (330g)
  • 1/2 of a cup of Cocoa Powder (110g)
  • (1/4 tsp) salt (2g)
  • Candy Coated Chocolate Chips
  • 1/2 of a TBSP of Vanilla Extract

Chocolate Ganache

  • 1/2 of a cup of Heavy Cream or Coconut Milk
  • 1/2 of a cup of Semisweet Chocolate Chips

Instructions

Brownies

  1. Preheat the oven to 350•. and prepare a 9x9 inch baking pan by spraying with nonstick spray and laying the pan one way with parchment paper. and then spraying the pan once more. Sift together the dry ingrediants: ap flour, cocoa powder and salt in a medium sized bowl.
  2. In a double boiler,melt together a stick of butter and 8oz of semi sweet chocolate chips.
  3. Add in the brown sugar and vanilla extract and stir until combined.
  4. Add in the eggs one at a time and stir between each addition until combined.
  5. Add in the dry ingrediants and fold them in until combined.
  6. Pour batter into prepared pan and spread out evenly.
  7. Bake for about 30 minutes or until a toothpick inserted in the center comes out with moist crumbs on it.
  8. Allow the brownies to cool to room temperture.

Chocolate Ganache

  1. In a small saucepot, bring your heavy cream or coconut milk to a simmer over medium low heat.
  2. Turn off the heat and add in the chocolate chips. Make sure they are all submerged and leave them to sit in the hot cream for one minute.
  3. After one minute stir until all combined.

Decoration

  1. Spread the ganache overtop of the brownies as smooth as you can manage.
  2. Sprinkle the colored chocolate chips over top of the ganache.
  3. Put the brownies in the fridge for 30 minutes to set.
  4. Cut the brownie slab in half one way.
  5. Using a wooden dowel, press an indent into the brownies half way across each half of the brownies.
  6. Cut both the halves of the brownie slab in 4.

Notes

Leave the leftovers in an airtight container in the fridge for up to a week.
