Father’s Day is coming up. When thinking about what types of things to make, I thought about what a dad likes as far as food is concerned. My dad, like I think a lot of dads out there, loves bacon. I mean don’t we all? And I have always wanted to make a skillet cookie so here we go. Let’s get into how to make peanut butter cookies with bacon in a skillet.

How To Make Peanut Butter Cookies With Bacon In a Skillet

This recipe is so simple. I usually like to chill my cookie dough for a while because I don’t want my cookies to spread too much but because this will be in a pan, the walls will prevent that from happening. If you decide to make individual peanut butter cookies which you are absolutely free to do so. ( I would just double the recipe) you would want to chill the dough for a couple hours to get it good and chilled. My peanut butter blossoms recipe is another example of how to make peanut butter cookies.

Sticky ingredients like peanut butter can be difficult to get out of a measuring cup. That’s why I use an adjustable measuring cup that is a bit like a syringe. So that you can basically push the contents out of the cup.

This adjustable measuring cup is a white cylinder with a black top top. This is the plunger part.  Then there is a peice around it that is clear with red tick marks for measurements.  I used this to measure out the peanut butter for my peanut butter cookies.

Cooking The Bacon For These Peanut Butter/Bacon Cookies

For these cookies I chose to use bits of real bacon. If you like, you could use store bought Bacon Bits.

I fried up the bacon extra crispy in a skillet and cut it up in pieces but you could always bake it in the oven. I would just make sure it’s extra crispy because biting down on fatty pieces in a cookie are pretty unpleasant.

Monkey Bread

Monkey bread is a perfect father’s day recipe for breakfast or brunch. It’s very quick to make up the night before and bake the next morning. Monkey bread is made with balls of crescent roll dough that is rolled in cinnamon sugar. This version also has cream cheese rolled up inside.

This is a very simple truffle ball with pecans that are soaked in bourbon and then mixed with butter and confectioners sugar. This batter is then formed into balls and covered in chocolate.

Peanut Butter Bacon Skillet Cookie

Yield: 8 inch round cookie

Salty and sweet maple infused blondies with bacon bits running throughout.

Instructions

  1. Preheat the oven to 350•, Cook and chop up the bacon. Sift The dry ingedients together into a medium sized bowl.
  2. Add the butter and the peanut butter to a large bowl and beat until smooth and incorperated.
  3. Add the brown sugar and beat to incorperate.
  4. Repeat with the egg and vanilla.
  5. Add in the dry ingredients and beat until incorperated.
  6. Add and fold the bacon bits in until evenly distributed.
  7. Add the batter to a small skillet and spread it out evenly.
  8. Bake at 350• for 25-28 minutes or until golden brown around the edges.
