Hi everyone, on my continued quest to find cozy, easy recipes for the holidays or just the cold weather. I thought that I would make a good old cookie recipe this week. These double chocolate macadamia nut cookies are just the perfect thing.

These are just a very simple white chocolate macadamia nut cookie recipe with semi sweet chocolate chips added.

Why did I Make This Recipe a “Double Chocolate Chip” Recipe?

In this recipe, I have both white chocolate and semi sweet chocolate or you can use dark chocolate.  White chocolate is very sweet so to counteract that, I added a chocolate that was not as sweet. As well as salt.

Which Chocolate Chip Do You Use?

Truth be told, I made a small mistake in this recipe. I did not realize that I accidentally bought mini white chocolate chips. What I wanted was standard white chocolate chips. But you can also use white chocolate chunks. This is completely your preferance.

Why is White Chocolate Paired with macadamia nuts?

Like I said before, white chocolate is very sweet with a hint of vanilla, and also very creamy and velvetty. so it needs something to counteract that.  Macadamia nuts are rich, buttery and crunchy. This is why they are such a great pairing.

Coconut Macadamia Nut Cookies

To make this version of these cookies, you can substitute a few things. You can substitute the unsalted butter for coconut oil and you can also substitute the chocolate chips for coconut flakes. Keep in mind, if you replace the butter with coconut oil, they will be crunchy and not as soft.

How Do You Cut Macadamia Nuts For Cookies

For these cookies I chopped the nuts roughly. To make chopped macadamia nuts, I used a cutting board and a large knife.

I first grouped the nuts into a pile. I then slowly chopped the nuts by having your dominent hand on the handle of the knife and your other hand resting on the top of the blade. Start with the knife at kind of an angle with the tip resting on the board. Slowly, move the knife down on top of the nuts, chopping them into smaller pieces. If you go too fast, the nuts will go everywhere.

Should You Roast/Toast Your Macadamia Nuts

When making white chocolate chip macadamia nut cookies you can toast the macadamia nuts if you like. Toasting the macadamia nuts will deepen the flavor and make them more nutty.

I personally did not toast them but if you would like to, you will put them in a 350• oven for about 10 minutes or until you smell a toast or nutty smell.

How To Make Cookies Fluffy

The best way to make baked cookies fluffy is to first cream your butter until light and fluffy and also sift your dry ingredients. Also the presents of any leavener such as baking soda makes cookies fluffier.

How To Make These Cookies Chewy

The best way that I found of making a chewy cookie is by using brown sugar along with granulated sugar. Also something that is utilized is bread flour to achieve a chewy texture. Bread flour has more glutan with makes baked goods chewier.

How To Make Cookies Less Sticky

There are a couple differant ways that you can work with sticky cookie dough. The first way is using a cookie scoop to portion out the dough on a baking sheet. This way does not change the cookie dough in itself, but it’s a way to deal with the sticky dough. 

Sometimes adding some grease to the cookie scoop will help.

The second thing that you can do is allow your dough to chill in the fridge for at least an hour. This will firm up the dough and make it less sticky.

Whenever I make a cookie dough recipe, I use a stand mixer to make things fast, easy, and more tidy.

How To Make This Recipe Healthy

Vegan White Chocolate Chip Macadamia Nut Cookies

Making these cookies vegan is super easy. First, you need some vegan butter in place of the regular butter. And then you have to use a flax egg in place of a real egg. That’s 1 TBSP of flax meal and 2 1/2 TBSP of water. Just make sure you chocolate chips are vegan as well.

Gluten Free White Chocolate Macadamia Nut Cookies

To make this cookie glutan free, you can just replace the all purpose flour with almond flour, coconut flour, arrowroot flour, etc.

To make a cookie recipe keto, it’s a lot like glutan free with the replacement of the flour but it goes one step further by replacing the sugar with ethrytol, munkfruit sweetener, Stevia. Anything, like that.

All you have to do here is replace the sugar with a sugar alternative like ethrytol or Stevia.

White Chocolate Macadamia Nut Cookies

Cook Time: 10 minutes
Additional Time: 2 hours
Total Time: 2 hours 30 minutes

Chewy cookies with macadamia nuts, white chocolate chips and semi sweet. chocolate chips.

Ingredients

  • 2 Sticks of Unsalted Butter
  • 1/2 of a Cup of Granulated Sugar
  • 1/2 Cup of Brown Sugar
  • 1 Large Egg
  • 2 Cups of All Purpose Flour
  • 1 1/2 Tsp of Baking Soda
  • 1/2 Tsp of Salt
  • 1 Tsp of Vanilla Extract
  • 1/2 Cup of White Chocolate Chips
  • 1/2 Cups of Semi Sweet Chocolate Chips
  • 1/2 Cup of Chopped Macadamia Nuts

Instructions

    1. Sift the dry ingredients together in a medium bowl - the flour, baking soda and salt. Chop the macadamia nuts.
    2. Add the softened butter and sugars to a large bowl or the bowl of your stand mixer. Beat for 2 minutes on medium speed with your stand mixer or hand mixer or by hand until light and fluffy.
    3. Add in the egg and the vanilla extract and beat until incorperated.
    4. Add in the sifted dry ingrediants and beat until you no longer see white streaks from the flour.
    5. Add in the chocolate chip and chopped macadamia nuts and fold in by hand until they incorperate fully.
    6. Portion on the dough into balls on a parchment lined cookie sheet.
    7. Cover the dough and put it in the fridge for 2 hours.
    8. Bake for 10 - 12 minutes or until golden brown on the edges.
