Happy Valentine’s Day everyone! Today, I am sharing a recipe with a couple different parts and some options.  I filled these Valentine’s Day chocolate chip cookie shots with chocolate mousse but you could also fill them with milk or Bailey’s.  I chose chocolate mousse because liquid can be a little difficult to hold in these cups.  You have to drink it pretty fast before they start to leak.

To make chocolate mousse, you need 3 elements a mixture of egg yolk, chocolate, vanilla extract and butter, whipped egg whites, and whipped cream.  Fold them all together any you have chocolate mousse. Tadaaaa. Click here for the recipe.

How To Make The Cookie Shots

First things that you are going to need is a shot glass mold or popover pan.  I personally like the silicone shot glass molds because you can see through them. So that way you will see when your shot glass is full with raw cookie dough.

Speaking of cookie dough, you could use a few different options to make these shots, you could use store bought dough or my homemade chocolate chip cookie recipe.

I used my homemade cookie dough recipe.  The only change was that I made it with semi sweet chocolate chips and Valentines Day M&M’s for the first attempt but then there were other changes made later.  You can use any kind of chocolate chips for this too: dark chocolate, white chocolate, milk chocolate, anything.

On my second attempt I used mini chocolate chips and no valentine’s M&M’s.  Reason being is that big chunks of things like chocolate chips, can ruin the structure of these shot glasses and cause them to crack and break.  

I also used heavy cream in this second attempt but more on that later.

You do not need to use chocolate chip cookie dough if you do not want to.  You could any anything you like like peanut butter, sugar cookie dough, whatever you like. I just think chocolate chip is the perfect valentines day cookie.

How To Fill The Mold

To fill this mold, you have to get a little messy.  If you don’t like that, I have tons of other valentines day recipes on this blog for you to choose from. Just go to the search bar and type in “Valentine’s Day”.

I quickly learned that this mold was really hard to fill partly because this dough was a dough and not a batter.  So to fix this, I added some heavy cream to the batter to loosen it up so that it wouldn’t be so hard to fill my mold.  

This way it would flow more into the molds rather than having to stuff it in. There still is some stuffing involved but not as much.  Just make sure that you see no gaps where you need to add more batter. I also used an offset spatula like these to push the batter in.

The mold

To make these shot glasses, I used this mold but you can also use a popover pan. If you are using a popover pan, just crumple up some tin foil in the shape of a cylinder the stick in each cavity to form the hole.

Coating With Melted Chocolate

To add more of a barrier between liquid and cookie it is also helpful to brush on some melted chocolate to the inside of your baked and completely cooled cookie. Then stick it back in the freezer to firm up for a few minutes.

Valentines Day Fruit Chocolate Chips Cookie Shots

Yield: 8 Cookie Shots
Prep Time: 1 hour
Cook Time: 15 minutes
Additional Time: 8 hours
Total Time: 9 hours 15 minutes

Small cups of chocolate chip cookie dough, filled with silky and luscious chocolate mousse.

Ingredients

Chocolate Chip Cookie Shots

  • 1 Stick of Unsalted Butter
  • 1/2 Cup of Granulated Sugar
  • 1/2 Cup of Brown Sugar
  • 1/2 Egg
  • 3/4.Tsp of Baking Soda
  • 1 Cup of All Purpose Flour
  • 1/2 Tsp of Vanilla Paste
  • 1/2 Tsp of Almond Extract
  • 1 Cup of Mini Semi - Sweet Chocolate Chips (more for melting and coating the inside)
  • Valentine's Day Sprinkles
  • 1 Cup of Heavy Cream

Other Options To Fill The Shot Glass

  • Milk
  • Baileys

Instructions

Chocolate Mousse

  1. Seporate the eggs and set aside.
  2. Bring a medium pot of shallow water or a double boiler to a simmer.
  3. Place a bowl with the chocolate on top or place the chocolate in the top of the double boiler.
  4. Melt the chocolate and the until smooth.
  5. Let the chocolate cool until slightly warm. Add the egg yolks and vanilla extract and stir until incorperated.
  6. Add the cream of tarter to a large bowl with the egg whites and whip until frothy. Add the sugar gradually and whip until you get stiff peaks. Set aside.
  7. Whip the heavy cream in another medium sized bowl until you get stiff peaks. Set aside.
  8. Add a third of the egg whites to the chocolate mixture and mix that in to lighten up the batter.
  9. Add another third and gently fold until there are just a few streaks of un - incorporate egg white.
  10. Add the remainder of egg white and repeat step 8.
  11. Add the whipped cream all at once and gently fold until completely incorperated.
  12. Cover with siran wrap and place the mousse in the fridge overniight to set.

Chocolate Chip Cookie Shots

  1. Sift the dry ingredients together in a medium bowl - the flour, baking soda and salt.
  2. Add the softened butter to a large bowl or the bowl of your stand mixer. Beat for 2 minutes on medium speed with your stand mixer or hand mixer or by hand until light and fluffy.
  3. Add in the sugars and the vanilla extract and beat until incorperated.
  4. Add in the egg and beat until incorperated.
  5. Add in the sifted dry ingrediants and beat until you no longer see white streaks from the flour.
  6. Add in the chocolate chips and fold in by hand until they incorperate fully.
  7. Grease your silicone shot glass mold or popover pan and push as much dough into each cavity of the shot glass mold as will fit.
  8. Bake for 30 -40 minutes or until deeply golden brown.
  9. When the shots are cooled completely, gently unmold each.
  10. Melt some chocolate and spread a small layer all over the sides and bottem of each cavity.
  11. Spread some melted chocolate on the edges of each shot glass.
  12. Dip edges of each glass into a tray of your valentines day sprinkle.. Let the chocolate dry.

Assemble

  1. Place the chocolate mousse into a piping bag with a star tip.
  2. Pipe the chocolate mousse into each shot glass or however many you want. or just spoon it in.
  3. Optional - Fill the rest with milk and/or Bailey's
