Now before anyone says anything I have made a dessert pizza before.  This is just a new lighter and more summery version of the  summer dessert pizza.  Also, last time a made a giant sugar cookie as the crust and this time I am using a premade pizza dough..  Try both the summer dessert pizza and the Nutella version and tell me which you like best

Summer Dessert Pizza: Picking your Crust

When it comes to dessert pizza there are 2 different crusts that can be used.  There is actual pizza crust and sugar cookie dough.  Sugar cookie dough is a little more sturdy for liquid toppings but can sometimes be too sweet depending on the other toppings that you use.  Pizza dough is another option that makes it feel like an actual pizza.

Dessert Pizza (Pizza Dough)

Yield: 1 8 inch pizza
Prep Time: 20 minutes
Additional Time: 1 hour
Total Time: 1 hour 20 minutes

A premade flatbread pizza crust with a lemon ricotta filling, mini chocolate chips, blueberries and a rasoberry compote drizzle.

Ingredients

  • 1 8 inch flatbread pizza crust
  • 1/2 Cup of Heavy Cream
  • The juice of 1/2 Lemon
  • 1/4 Cup of Ricotta
  • 1 Cup of Confectioners Sugar
  • 1/4 of a Cup of Mini Chocolate Chips 
  • 1/4 of a Cup of Blueberries
  • 2 Tbsp of Raspberry Preserves
  • 1 Tbsp of Water
  • 2 tsp of Confectioners Sugar

Instructions

The Filling

  1. Add the heavy cream to a large bowl and whip it up with an electic hand mixer or stand mixer until you get stiff peaks.
  2. Add the ricotta to another large bowl along with the lemon juice. Beat until incorperated.
  3. Add the confectioner sugar in little by little and incorperate little by little to avoid the confectioners sugar from going everywhere.

Assemble the Pizza

  1. Place a premade flatbread pizza crust ontop of a sheet tray lined with parchment paper.
  2. Smear on a thick layor of the filling, leaving a 1/2 inch border around the edges.
  3. Sprinkle on the blueberries randonly, as many or as little as you want.
  4. Do the same with the chocolate chips.

Raspberry Drizzle

  1. Combine the raspberry preserves,water, and confectioners sugar until you get a sauce that is thisn enough tfor o drizzle.
  2. Drizzle on as much or as little as you want.
  3. Refridgerate for 1 hour before eating.
