We’ll start out with a fluffy chocolate cookie recipe, add chocolate chips and a little peppermint extract and viola! You have double chocolate, mint cookies.

How To Make The Best St. Patrick’s Day Dessert Recipe Ever!

To make this, I started with my chewy chocolate chip cookie recipe and adapted it a little.

For one thing, I added some cocoa powder to make this a chocolate based cookie. I also replaced the vanilla extract with peppermint extract. You can add them both to this recipe. I just didn’t want the flavors to compete.

You can also add as much or as little peppermint extract as you like. I at first was very sparing and only added 1/2 of a tsp and then I tasted the dough at the end and decided that it needed more.

The goal is for you to be able to taste the peppermint in the dough but for it not to be so overpowering that it tastes like toothpaste. I did a tsp.

The other adaptation that I made was the original recipe has half granulated sugar and half brown sugar. But since this is a chocolate cookie and I wanted to give it that deep, molasses flavor, I added all brown sugar. That why it is extra chewy as well.

I then chilled the dough for 2 hours. This does a few things. It let’s the dough relax, leading to a less tough and more chewy and fluffy cookie. Gives the flavors some time to mingle. And also cools the dough down so it doesn’t spread as much in the oven.

After this chilling period, I used a cookie scoop to scoop even balls of dough out the on a prepared cookie sheet. Press each cookie down into a disk so that it doesn’t puff up too much while baking.

You don’t have to but I do recommend that you temper the chocolate. I know that sounds scary and complicated but I promise you it’s neither. In the post, I walk you through a very simple method for doing it.

I also have a Bailey’s Irish Cream Cheesecake. This one is made with alcohol but if you don’t like that that’s totally ok. You can just replace the Bailey’s with coffee. It won’t taste exactly the same but it gets the point across.

Another cheesecake is a Chocolate, Mint and Guinness cheesecake . The flavor is just as it sounds Boozy, minty and chocolatey. But I think the special thing about this is the decoration.

The whipped cream is piled up to look like clouds and the. There are long strips of gummy soaps that resemble a rainbow. The middle also has a fake pot of gold.

This recipe was shared on Tiktok where I made a shamrock shake.  This very simple shake features just 5 ingredients: milk of your choice, vanilla ice cream, the optional Baileys Irish cream, and mint extract and green food coloring.

Then you have your optional whipped cream.  You can find the recipe and video for this ever popular green dessert here.

Double Chocolate Chip Mint Cookies

Double Chocolate Chip Mint Cookies

Prep Time: 30 minutes
Cook Time: 10 minutes
Additional Time: 2 hours
Total Time: 2 hours 40 minutes

Chocolate cookies with chocolate chips and a hint of peppermint.

Ingredients

  • 2 Sticks of Unsalted Butter
  • 1 cup of brown sugar
  • 1 Egg
  • 1 Cup of All Purpose Flour
  • 1/2 cup of Cocoa Powder
  • 1/2 tsp of Baking Soda
  • 1 tsp of Baking Powder
  • 1/4 tsp of Salt
  • 1 Cup of Chocolate Chips
  • 1 tsp of Peppermint Extract

Instructions

    1. Sift the dry ingredients together in a medium bowl - the flour, cocoa powder, baking soda and salt,
    2. Add the softened butter and sugar to a large bowl or the bowl of your stand mixer.
    3. Beat for 2 minutes on medium speed with your stand mixer or hand mixer or by hand until light and fluffy.
    4. Add in the egg and the peppermint extract and beat until incorperated.
    5. Add in the sifted dry ingrediants and beat until you no longer see white streaks from the flour.
    6. Add in the chocolate chips and fold in by hand until they incorperate fully.
    7. Portion out the dough into balls on a parchment lined cookie sheet. Push the center of them a little so that they are more like disks.
    8. Chill in the fidge for 2 hours..
    9. Bake for 8-10 minutes or until golden brown on the edges.

Notes

My cookies were about 1 inch in diameter but you can make them as big as you like.
