Marshmallow is perfect.  Don’t you agree?  It’s so classic.  This frosting combines my Stabilized whipped cream recipe and standard marshmallow fluff to create a sweet and airy topping.

Marshmallow Frosting

Yield: 2 Cups
Prep Time: 20 minutes
Total Time: 20 minutes

A light and airy frosting topping with a sweet marshmallow flavor.

Ingredients

  • 1 Cup of Heavy Cream
  • 1/2 of a Cup of Granulated Sugar
  • 1 Cup of Marshmallow Fluff
  • 1 teaspoon of Unflavored Gelatin
  • 2 Tbsp of Cold Water
  • 1 TBSP Boiling Water

Instructions

  1. Combine the gelatin and the cold water and stir to combine. Leave for 5 minutes to set.
  2. Place the heavy cream in the bowl of your stand mixer fitted with a whisk attachment.
  3. Beat on high speed until frothy. About 2 minutes.
  4. Add sugar in a steady stream while mixing.
  5. Beat until you reach the soft peak stage. about 2-3 more minutes. In the meantime, add the boiling water to the gelatin mixture. Stir to dissolve.
  6. When you reach the soft peak stage, trickle in the gelatin mixture while mixing and continue beating until you reach the hard peak stage. About 3-5 more minutes.
  7. Gently fold in the fluff and put back on the mixer and beat the frosting to firm it back up if needed.
