Fruit is the perfect ingredient to complete any dessert.  It’s sweet, it’s tart and it’s also very pretty.  It’s just so bright and vibrant.  A glossy, sweet and shiny strawberry compote is the best way to incorporate this.

A compote is an almost jam like fruit sauce. It is made up of fruit (usually berries), sugar, a squeeze of lemon and a corn starch slurry to thicken. The sugar, berries and lemon juice are put together in a pot and cooked until the boiling.  Then the slurry is added to thicken.

I love recipes like this because the are so adaptable to your taste.  You want it to be more sweet? Add sugar.   More tart?  Add lemon.  You can use different types of fruit.  Just note, there might be a consistency difference depending on which you use.  You can also use different citrus’s to brighten the compote.  For instance a strawberry lime compote would be delicious.  Play around with combinations, have fun, and I’ll see you next time.
