It’s getting HOT out there. Time for some cool and refreshing summer treats. Let’s try this homemade iced cream cake.

How To Make A Very Simple Homemade Iced Cream Cake

Now, there are a million and one ways to make an iced cream cake. You can use actual homemade iced cream or you can use store bought. The flavor is also totally up to you.

I personally don’t like iced creams as much that have nothing in it like plain vanilla or chocolate. Instead, I picked Ben and Jerry’s, “Half Baked”. It is a chocolate and vanilla base with chunks of brownie batter and chocolate chip cookie dough. Absolutely delicious.

When it comes to toppings, you can use anything you like, Oreo crumbs, M&M’s, cool whip, whipped cream, caramel etc.

I used a Carvel iced cream cake as my inspiration for this. So I chose oreo crumbs for a little bit more crunch and also some cool whip. No frosting over the top though.

Once you have all your components, it’s just a matter of layering. I did not take a picture of this but in between the cool whip and Oreos in the middle and the top but I just added a layer of iced cream before I added the top layer of cool whip and Oreos. Then stuck it back in the freezer overnight.

Pans For Homemade Iced Cream Cake

For this homemade iced cream cake, I used a square springform pan. You can use another pan but a springform pans work great because you can take off the sides, eliminating your need to transfer the cake. This is good because frozen treats are pretty fragile. I used a 6 inch springform pan for this but you can use any size that you would like.

Iced Cream Cake

Yield: 6 Inch Cake
Prep Time: 20 minutes
Additional Time: 1 day
Total Time: 1 day 20 minutes

A cake layored with Ben and Jerry's Half Baked iced cream, oreo crumbs and cool whip.

Ingredients

  • 2 Pints of Iced Cream of Choice (I chose Ben and Jerry's Half Baked
  • 1/4 of a Cup of Cool Whip
  • 10 Oreos
  • Oreo Crust

Instructions

Oreo Crust

  1. Crush up 1 sleeve of oreos in a bag with a rolling pin or food processor.
  2. Add in 2 TBSP of melted butter and mix until you get the texture of wet sand.
  3. Press the crumbs into a springform pan and then freeze for 1 hour.

Assembling the Iced Cream Cake

  1. Take the pints out of freezer and let them thaw for 15 minutes to make spreading a little easier.
  2. Layer 1 pint of iced cream ontop of the crust.
  3. Layor the cool whip ontop of that. Spread out into an even layor.
  4. Sprinkle on a layor of oreo crumbs.
  5. Layor on another pint of iced cream.
  6. Top with more oreo crumbs.
  7. Stick the cake in the freezer overnight.
  8. Unmold the cake, slice and serve.
