I love making cookies,  I love coming up with new flavor combinations to make,  I love figuring out how to make them the texture that I like.  All of it,  The only problem is it is very tempting not to eat the cookie dough before it’s baked.  Cookie dough is soooo good.  The only issue with that is that raw cookie dough can be dangerous because it has raw eggs which can give you salmonella.  Enter, edible cookie dough!

    What if there was a recipe for edible cookie that didn’t have eggs in it so you can eat to your heart’s content with no risk of getting sick?  Well you are in luck because one,  edible cookie dough is a huge trend that has gotten shops to pop up everywhere just devoted to edible cookie dough.  And for two, edible cookie dough is incredibly easy to make at home.  Today, I am going to show you how to make 3 flavors so you can take your pick.  The first is just good ol’ chocolate chip cookie dough then, I have a double chocolate dough and a rocky road.  All super easy and quick and the best part is they can be eaten IMMEDIATLY.  I suppose you could even make my crowniesblueberry/lemon cookies, or even my chocolate chip tahini cookies into edible cookie dough as well.

Edible Cookie Dough

3 Flavor of Edible Cookie Dough

Yield: 3 (1 inch) balls
Prep Time: 30 minutes
Total Time: 30 minutes

Fresh cookie dough meant to be eaten without baking. In 3 indulgent flavors: chocolate chip, double chocolate, and rocky road.

Ingredients

Chocolate Chip Edible Cookie Dough

  • 1/2 of a stick of Unsalted Butter (Softened)
  • 2 TBSP of Packed Brown Sugar
  • 2 TBSP of Granulated Sugar
  • 1/2 of a Cup All Purpose Flour
  • 1/2 of a tsp of Vanilla Extract
  • 1/8 of a tsp of Salt
  • 1/4 of a Cup of Semi Sweet Chocolate Chips

Double Chocolate Edible Cookie Dough

  • 1/2 of a stick of Unsalted Butter (Softened)
  • 2 TBSP of Packed Brown Sugar
  • 2 TBSP of Granulated Sugar
  • 1/2 of a tsp of Vanilla Extract
  • 1/4 of a Cup pf of a Cup of All Purpose Flour
  • 1/4 of a Cup of Cocoa Powder
  • 1/4 of a Tsp of Instant Espresso Powder
  • 1/8 of a tsp of Salt
  • 1/4 of a Cup of Semi-Sweet Chocolate Chips

Rock Road Edible Cookie Dough

  • 1/2 of a Stick of Unsalted Butter (Softened)
  • 2 TBSP of Packed Brown Sugar
  • 2 TBSP of Granulated Sugar
  • 1/2 of a Tap of Vanilla Extract
  • 1/4 of a Tsp of Instant Espresso Powder
  • 1/8 of a Tsp of Salt
  • 1/4 of a Cup of All Purpose Flour
  • 1/4 of a Cup of Cocoa Powder
  • 1 Tbsp of Chopped Walnuts
  • 1 TBSP of Mini Marshmallows

Instructions

Chocolate Chip Edible Cookie Dough

  1. Sift together the dry ingredients of your desired cookie dough in a large bowl and set aside.
  2. In a large bowl of a stand mixer or regular bowl with an electric or hand mixer beat the butter until light and fluffy. About 2 minutes.
  3. Add the sugars and the vanilla extract and beat until incorporated.
  4. Add the dry ingredients and beat until you see no more streaks of flour.
  5. Add the toppings of your desired cookie dough and fold them in by hand.
  6. Enjoy immediately and wrap leftovers in plastic wrap and refrigerate for up to a week
