Hi everyone! Last week, I shared a light, fruity and tangy recipe for Thanksgiving dessert, Blueberry Cobbler Cheesecake Bars. This week we are going into more of the chocolaty realm with this Buckeye Pie.

Let’s Break It Down

What is Buckeye Pie?

Buckeye pie is the state pie of Ohio also called the buckeye state. The state was nicknamed after a tree that grows in the state called the Buckeye tree.

Buckeye Pie is a very simple old fashion peanut butter pie with an Oreo crust and chocolate ganache on top.

The peanut butter filling is made of peanut butter, butter ,powdered sugar and vanilla extract.

There is also a candy version of this dessert. That being buckeye candy. These are just peanut butter balls dipped in melted chocolate.

This candy was made to simulate the look of the buckeye nut which of course grows on the buckeye tree.

Oreo Crust

You can get the Oreo Pie Crust in 2 different ways. Store bought and homemade.

I typically make a homemade Oreo crust but for this recipe I chose to take the easy route and buy store bought.

Homemade Oreo Crust

My oreo crust recipe is also an excellant option and so easy. Just start by putting 2 rows of oreo in a food processor. You can also use a freezer sized bag. Process or bash up the cookies with a rolling pin until you get fine crumbs. Now just add the melted butter and press that mixture into the pan. Bake for 10 minutes.

Also, you could always use a graham cracker crust.

Gluten Free Oreo Crust

This can be made glutan free by just simply using glutan free oreos. And replacing the butter with vegan butter or coconut oil.

The Peanut Butter  Mixture

This peanut butter filling is extremely easy. It starts with butter. It is always better to use unsalted butter so that you are able to control the salt content. Also, you want to make sure the butter is softened.

To make this a vegan or glutan free buckeye pie, just use vegan butter.

For the peanut butter, it is a little easier to use creamy peanut butter but you could always use crunchy peanut butter for a little more texture.

The last ingredient besides vanilla extract is 1 cup powdered sugar.

Then, this all goes in your mixing bowl with a spatula or bowl of your stand mixer.

Once all incorperated this will go into your cooled crust.

How to make Chocolate Ganache

For the top of this peanut butter buckeye pie, we are making some chocolate ganache to use as a glaze.

Chocolate ganache is a chocolate mixture that is composed of heavy cream/heavy whipping cream and chocolate chips or chocolate shavings.

Products That I Used

The type of chocolate chips that I used in this ganache was semi sweet chocolate but you could also use white chocolate chips to make white chocolate ganache or ruby chocolate chips to make pink chocolate ganache.

Last step is to just pour this on top of your peanut butter filling, cover it in plastic wrap and put it in the fridge until the ganache is set. That will take about an hour. After that is set, you can add additional whipped cream or cool whip if you want.

Yield: 1 9 inch pie
Prep Time: 30 minutes
Cook Time: 5 minutes
Additional Time: 1 hour
Total Time: 1 hour 35 minutes

An Oreo pie crust with peanut butter filling and topped with a thick chocolate ganache.

Ingredients

Peanut Butter Layer

  • 1 9 inch Oreo Crust
  • 1 Stick of Unsalted Butter
  • 1 Cup of Creamy Peanut Butter
  • 1 Cup of Powder Sugar
  • 1 Teaspoon of Vanilla Extract.

Chocolate Ganache

  • 1 Cup of Semisweet chocolate chips
  • 1/2 of a Cup of Heavy Cream

  • Oreo Crust

Instructions

Oreo Crust

  1. Bash the Oreos into crumbs and add in the melted butter and combine.
  2. Press into a 9 inch pie plate and bake for 10 minutes at 350•F.

Peanut Butter Layer

  1. Add the softened butter to a bowl and beat until smooth, light and fluffy.
  2. Add in the peanut butter and vanilla extract and beat until incorperated.
  3. Add in the confectioners sugar and beat until incorperated.
  4. Add the peanut butter filling to the pie crust. Spread in an even layer.
  5. Leave this covered in the fridge until you make the ganache.

Chocolate Ganache

  1. Heat up the heavy cream in a pan until simmering.
  2. Add in the chocolate chips and make sure they are all submerged in the cream. Wait 30 seconds.
  3. Vigeriously whisk until it comes together.
  4. Pour that ganache on top of the peanut butter layor.
  5. Smooth out, leaving a 1/2 to 1 inch border all the way around the sides.
