Hi Everyone!  In light of everything going on in the world right now I wanted to make something that everyone could make using common ingredients that you may already have on hand.  This takes my normal no bake cheesecake recipe and adds blackberry puree to make a blackberry cheesecake that I am using for a recipe later in the week but this can be used for anything from a hole cheesecake to a filling for a traditional cake.

Substitutions

         To help you guys to not have to go out for ingredients for this recipe here is a list substitutions that you can put in place of a a lot of the different ingredients in this recipe.

Greek Yogurt – Sour Cream

Full Blackberries – Blackberry Juice, Blackberry Jam or Jelly

Heavy Cream – Cool Whip,  Just make sure to add 1/4 of a tsp of salt if you do that because cool whip is sweetened so it needs to be balanced out.

No-Bake blackberry cheesecake trifles

No Bake Blackberry Cheesecake

Yield: 2 Trifles worth
Prep Time: 20 minutes
Additional Time: 1 hour
Total Time: 1 hour 20 minutes

A fresh, bright, simple and sweet blackberry no bake cheesecake mixture. That can be used for just about any application. Whole cakes, fillings for cakes, or trifles.

Ingredients

  • 1 (8oz) Block of Cream Cheese
  • 1/6 of a Cup of Greek Yogurt or Sour Cream
  • 1/3 of a Cup of Granulated Sugar 
  • 1/3 of a Cup of Heavy Cream
  • 1 tsp of Vanilla Extract
  • 6oz of Blackberries

Instructions

  1. Add the heavy cream to your stand mixer with a whisk attachment or mixing bowl with an electric hand mixer or whisk. Beat for about 10 minutes or until you get stiff peaks. Transfer to another bowl and leave it in the fridge covered until the end of the recipe.
  2. While that is happening, blend the berries up in the blender until you get a puree.
  3. Add the cream cheese to the bowl and beat until smooth. About 10 minutes.
  4. Add the puree to the bowl and beat on high speed until combined.
  5. Add the sugar and beat to combine on medium speed.
  6. Add the greek yogurt and vanilla extract and beat until combined
  7. Fold the whipped cream into the mixture until fully combined.
  8. Place in the fridge untill ready to use. If you are using it for a full cake, even the mixture out in the plan and leave it in the freezer overniight.
